If possible, it’s much better to use fresh ginger and sauté it before the other ingredients so they’re imbued with its flavor. However,  you have to be very careful because ginger burns very quickly.

The Secrets of Chinese Rice Cooking

To prepare this dish, it is very important to have all the ingredients ready, previously cooked and chopped; cooking should be done quickly over high heat. The ideal is to prepare Chinese rice in a wok pan, but it can also be done in a deep skillet.

It is essential to use some type of fat to saute each of the ingredients. In restaurants, pork butter is often used to add flavor; but if you want to make a healthier preparation, it is better to use olive oil or vegetable oil.

Heat the pan to the maximum, add the fat or oil and saute each ingredient separately, for a maximum of 3 to 4 minutes. Vegetables should not be overcooked, so this time will be enough to bring them to perfection.
