The ingredients used in this recipe are varied. The base is rice, but you can add only vegetables or meat, chicken or shrimp; usually add egg as well.

Chinese rice can be served as a side dish or as a main dish. Both options are excellent for satisfying more than two people, so  it is an ideal meal to share.

To prepare a delicious Chinese rice recipe, the first thing needed is cooked white rice. The ideal is that it is rice prepared in advance, if you made it the day before it will be much better, but it must be chilled.

In addition to rice, you must choose the vegetables and meat you want to put in the recipe. The most common is to use onions, carrots, peas and soy sprouts; if there are leftovers from the day before in the fridge, such as pumpkin or beans, they are also good choices.

As for meat, it usually includes chicken, beef or pork. You can also add sausages such as chorizo ​​or sausage. For a more assorted version, it is very common to use shrimp to get a more gourmet preparation.

Chinese egg is almost always used as well, with many different techniques. It is best to prepare scrambled eggs in a separate pan and set them aside for later mixing in the final dish.

To prepare this dish, it is very important to have all the ingredients ready, previously cooked and chopped; cooking should be done quickly over high heat. The ideal is to prepare Chinese rice in a wok pan, but it can also be done in a deep skillet.

It is essential to use some type of fat to saute each of the ingredients. In restaurants, pork butter is often used to add flavor; but if you want to make a healthier preparation, it is better to use olive oil or vegetable oil.

Heat the pan to the maximum, add the fat or oil and saute each ingredient separately, for a maximum of 3 to 4 minutes. Vegetables should not be overcooked, so this time will be enough to bring them to perfection.

Ingredients

  • 2 scrambled eggs (50 g).
  • 1 handful of soy sprouts (30 g).
  • Finely chopped fresh ginger.
  • 2 or 3 finely chopped onions (60 g).
  • 1 stalk of finely chopped celery (20 g).
  • 1 green pepper, chopped in small dice (30 g).
  • 1 cup of fresh shelled shrimp (150 g).
  • 2 cups of previously cooked white rice (400 g).
  • 1/2 cup of frozen vegetables: carrots, corn and peas.
  • Vegetable oil, salt, pepper, soy sauce (to taste).

Preparation

  1. In a very hot wok pan, add a drizzle of oil. Saute the ginger briefly and set aside.
  2. Fry shrimp for two minutes (or until they change color) and set aside.
  3. Saute all vegetables for 4 minutes.
  4. Add soy sauce, ginger and rice. Mix.
  5. Add shrimp and scrambled eggs.
  6. Stir constantly until everything is well mixed and serve.
